| 内容記述 | 鹿児島県の特定給食施設における非常用食料の実態を調査した。鹿児島県内の集団給食施設に2004年(平成16年)10月から11月にかけて155施設にアンケート調査を依頼し,124施設(回収率80%)から回答を得た。施設の内訳は,病院(52施設),学校給食(32施設),保育園(20施設),社会福祉施設(14施設),寮(4施設),自衛隊(2施設)である。災害に備えての施設ごとの備蓄状況にっいては,備蓄のある施設が37%(46施設),備蓄のない施設が63%(78施設)であった。非常食のある施設における設置時期は1997年(平成7年)に発生した阪神・淡路大震災以降が多く,全体の85%を占めていた。備蓄食品例については主食,主菜,副菜,果物,飲み物・スープ,特殊食品,その他に分類した。保存量にっいては52%において2～3日分を備蓄していた。非常食の条件では「調理にあまり手間のかからないもの」が44%,「長期保存に耐えるもの」が37%であった。非常食の更新にっいては「品質保持期限または賞味期限の範囲内で行う」が55%,「適宜行っている」が35%であった。備蓄への考えにっいては学校・学校給食センター,保育所においては非常時,休校となるため,現時点では特に非常食の備蓄は検討していないと言える。全施設においては非常食を利用するような事態への遭遇は7%であった。 | |||||

| 内容記述 | Emergency Foodstuffs stored in the specified food service facilities in Kagoshima were investigated from October to November, 2004, and some valuable information was obtained for supporting the business of dietician. The questionnaire was sent to 155 facilities and the answers were received from the 124 facilities (recovery 80.0%) ; 52 hospitals, 32 schools, 20 preschools, 14 social welfare, 4 dormitories, 2 stations of the self-defense force. The 37% of the facilities have stored emergency foodstuffs mostly after the great Hansin-Awaji earthquake of 1997. No school and preschool reserved the foodstuffs. Stored foodstuffs were mostly commercial foods and they were pre-cooked rice, retort rice gruel, cans of fishes, meats, vegetables, mandarin orange and groceries, drinking water, fruit juice, retort soup, and high-density liquid diet. The amount of the emergency foods for 2-3 days was reserved in the facilities of 52%. The 55% of the facilities renewed the foods considering the term of food quantity maintenance or taste relish, while the facilities of 35% properly renewed them. The 7% of the facilities encountered with emergency and used stored foods. | |||||
