University","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"肥満を抑制する手段の1つとして提唱・実施されている咀嚼法のように,咀嚼回数を増やしたり食事に時間をかけることが,摂食量や食後の満腹感および空腹感に及ぼす影響を検討した。若年女性23名(年齢21.7± 0.2歳,BM1 20.4± 1.5 kg/m2:平均±標準偏差)を対象として,咀嚼回数と食事にかける時間を変えた3条件[1口当たり20回咀唱,1口当たり40回咀嚼,1口当たり20回咀嚼+待ち時間(1口ごとに待ち時間を設け,食事にかける時間は40回咀嚼と同じ)]のランダムクロスオーバー試験にて,満腹感を得るまでの摂取量を測定した。実験食のエネルギー産生栄養素バランスは,たんぱく質15%,脂質29%,炭水化物56%であつた。実験食の摂取前後の満腹感および空腹感をvisual analogue scales(VAS)法により測定した。満腹感を得るまでに摂取したエネルギー量は,20回咀嚼で849± 263 kcal,40回咀嚼で757± 234 kcal,20回咀嚼+待ち時間で738±205 kcalであり,20回咀嚼の摂食量は他の2条件と比べて有意に高かった(P<0.05)。食事にかかった時間は20回咀嚼で32.6± 9.5分,40回咀嚼で48.9± 15.7分,20回咀嚼+待ち時間で48.6± 16.0分で,20回咀嚼の食事時間は他の2条件と比べて有意に短かった(P<0.05)。実験食摂取直後の満腹感のVAS値は3条件間に差はみられなかった。実験食摂取開始から6時間に渡る期間の満腹感および空腹感の平均値,最大値,最小値に3条件間で差はみられなかった。これらの結果から,咀嚼回数を増やし時間をかけて食事を摂ることが,摂食量を抑える手段として有効であること,抑えられた摂食量でも食後の腹持ちに支障がない可能性が示され,肥満を抑制する手段としての有効性が示唆された。また,摂食量の抑制には,咀嚼回数よりも食事にかける時間の影響が大きい可能性が示唆された。","subitem_description_type":"Abstract"}]},"item_10002_publisher_8":{"attribute_name":"出版者","attribute_value_mlt":[{"subitem_publisher":"鹿児島純心女子大学看護栄養学部"}]},"item_10002_source_id_11":{"attribute_name":"書誌レコードID","attribute_value_mlt":[{"subitem_source_identifier":"AA11824432","subitem_source_identifier_type":"NCID"}]},"item_10002_source_id_9":{"attribute_name":"ISSN","attribute_value_mlt":[{"subitem_source_identifier":"1348-4303","subitem_source_identifier_type":"ISSN"}]},"item_creator":{"attribute_name":"著者","attribute_type":"creator","attribute_value_mlt":[{"creatorAffiliations":[{"affiliationNameIdentifiers":[{"affiliationNameIdentifier":"","affiliationNameIdentifierScheme":"ISNI","affiliationNameIdentifierURI":"http://www.isni.org/isni/"}],"affiliationNames":[{"affiliationName":"","affiliationNameLang":"ja"}]}],"creatorNames":[{"creatorName":"松元,
